Lurrrve Sanma !秋刀魚 or 鰍 we can write either way. anyways there is 秋 conected with the both charactors but we write and read the same way. Sanma in school comes close to Japan in fall everyyear. In this year, in order to the stream of tide changing by the typhoon, The Sanma in school came much closer to Hokkaido so the sanma are caught in large quantities in this area.
I cooked vinegrett dressing with thin sliced paprika and eringii mushrooms on a sauteed sanma.The sanma has so much oil which is the Eicosapetaenoic acid. sometime people take the oil out hen they cook because the most of J-food is not so greesy. But sanma has soooo much the Eicosapetaenoic acid in itself. don't throw this away, don't wipe this oil out of the pan with kitchen paper like the most of Japanese house wives do. That's why I make a vinegrett dressing for not so oily feeling like ojisan. Depends on how you feel, put sugar little bit or chilli pepper or basil powder. I prefer to put a little bit of shoyu so that it would go with gohan better.
Fresh sanma does not smell and is very clean. It is not so difficult that you can choose fresh ones at the supermarket. This is the most important thing to pick clear pretty eyes with a yammy sanma and it should not get scraped or no wounds on the sanma body. Cut a head and in a half of body without your loss and cut it like a samurai ! (it maybe suitable to say to chop it off but i feel like to say to cut it off like using a Katana.) And to open up its belly with a cut it into the horizontal line through its belly to get the insides which is very tasty to eat but it tastes bitter, so don't hasitate to throw the insides away. The insides and blood make very stink afterward if you don't clean up well. Put some salt with your finger tip on an opened belly of each cut sanma. Put 1 tea spoon of olive oil and saute some cut sanma on a frying pan with a small heat otherwise they go so easy to get burned black because of the sanma oil. After the sanma being sauteed, put sliced vegitable in a same pan without clean up because the sanma oil is very famouse, so much good for the triglyceride and the metabolic syndrome. now ready to serve and eat it out !
